One of the things we're passionate about is taking our subscribers beyond the supermarket shelf. Anyone can find the familiar names, but discovering whiskies that make you stop, think and smile? That's where the real adventure begins.
This month's selection perfectly captures what Lactodorum is all about.
We've travelled from Ireland, through Romania, before finishing in Scotland, showcasing three whiskies that have all spent time in beer casks. Better still, every one of these bottlings is a limited release, making them even more special.

The Whistler Imperial Stout Cask Finish
Ireland
We begin our journey in Ireland with one of the country's most exciting modern distilleries.
The Whistler is produced at Boann Distillery in County Meath, a family-owned distillery built around a true grain-to-glass philosophy. Rather than sourcing spirit and simply bottling it, Boann controls every stage of production, from milling and mashing through to distillation, maturation and bottling, all under one roof in the historic Boyne Valley. The result is a distillery that combines traditional Irish whiskey-making with an eagerness to experiment through innovative cask finishes.
For this limited release, just 300 bottles were produced in collaboration with Lough Gill Brewing Co. and the process is wonderfully inventive. Freshly emptied Whistler single malt casks were filled with Imperial Stout, allowing the beer to season the oak with layers of roasted malt, cocoa and coffee. Those beer-soaked casks were then filled once more with The Whistler's signature triple distilled blend, allowing the whiskey to absorb those rich brewing influences.
The result is unmistakably Irish whiskey, but with an indulgent twist.
Tasting Notes
Nose: Dark berries, roasted coffee, creamy cocoa and gentle vanilla.
Palate: Silky chocolate, caramel, espresso and toasted malt with soft orchard fruit sitting underneath.
Finish: Long, creamy and warming with lingering cacao and gentle coffee bitterness.

Greek & Cypriot Collection, Greek Beer Cask Finish
Romania
If you've never tried Romanian whisky before, you're certainly not alone, and that's exactly why this bottle deserves a place in our tasting box.
Carpathian Single Malt is produced at the Alexandrion Saber Distillery, nestled beneath Romania's spectacular Carpathian Mountains. Although Romania has a long history of spirit production, single malt whisky is still a relatively young category there, allowing the distillery to forge its own identity rather than simply copying Scotland.
The distillery combines Scottish copper pot stills with exceptionally pure mountain water and locally grown barley, while embracing an adventurous maturation programme featuring wines, fortified wines and increasingly unusual finishing casks from across Europe. Their willingness to experiment has quickly earned Carpathian international recognition despite being one of Europe's newest whisky producers.
Our bottle comes from their fascinating Greek & Cypriot Collection.
Each release is a single cask bottling, making every bottle unique. In this case, the whisky spent its finishing period in Greek beer casks, adding another layer of complexity to an already distinctive Romanian single malt.
It's probably one of the most unusual whiskies we've featured, and exactly the kind of discovery we hope makes members smile.
Tasting Notes
Nose:Fresh cereal, honey, citrus peel and warm malt with gentle herbal notes.
Palate: Sweet barley, biscuit, toasted nuts, soft stone fruits and a pleasant malty richness that gradually develops into gentle spice.
Finish: Clean, warming and surprisingly long with lingering cereal sweetness and delicate hops.

Douglas Laing Timorous Beastie
WEST Brewery Doppelbock Finish
Scotland
Our final stop takes us back to Scotland, but not to a single distillery.
Douglas Laing has spent over 75 years building a reputation as one of Scotland's best-loved independent bottlers. Rather than producing whisky themselves, they source exceptional casks from some of Scotland's finest distilleries, creating limited releases that celebrate flavour rather than consistency.
Their famous Remarkable Regional Malts series showcases Scotland's whisky regions, and Timorous Beastie represents the Highlands, a marriage of Highland single malts bottled without chill filtration or added colouring to preserve maximum character.
For this special collaboration with Glasgow's WEST Brewery, only 300 bottles were produced.
The whisky was finished in a cask that had previously held WESTWERK Doppelbock, a rich German-style lager renowned for deep malt sweetness and chocolatey character. Rather than overwhelming the whisky, the beer cask adds another layer of richness that complements Timorous Beastie's naturally honeyed Highland profile.

Nose: Honeycomb, vanilla, sweet malt, orange peel and soft oak.
Palate: Milk chocolate, digestive biscuits, toasted malt, gentle spice and caramelised nuts.
Finish: Rich cereal sweetness with lingering chocolate, honey and warming oak spice.

This month's box isn't just about beer casks, It's about curiosity, it's about discovering whiskies you probably wouldn't stumble across on a supermarket shelf.
