This farm distillery was established in 2005, and was the first new distillery to be built on Islay in over 124 years. Kilchoman are the only distillery using 100% Islay barley, meaning they're able to compete barley to bottle in one location.
 
Machir Bay is matured in both bourbon and sherry casks, and is named after a scenic Islay beach.  This dram has a PPM (the Peat level (Parts Per Million)) level of 50, so it's quite Peaty!!
 
Nose: Lemon zest, pears, vanilla, sea salt and lots of peat smoke.
Palate: Honey, dried fruit and pineapple, caramel and warm smoke.
Finish: Long sherry notes, with dried fruit and baking spices and finally more peat smoke.
